Naan Paneer Pizza (Healthy version with 15 min prep time)

Have I told y’all about my picky toddler? As surprising as it may sound, she isn’t particularly crazy about pizza as most kids are and she devoured this one so it’s a win-win for this momma. Disclaimer: scroll to the bottom for recipe if you don’t want to read the gibberish I am about to spill out! 🙂

This pizza is like having best of the both worlds. India meets America – is that a thing?

Is there such a thing as a healthy pizza? You bet there is. I used whole wheat naan purchased from a local Indian grocery store, but you can pretty much use anything else as a base that’s available in a regular grocery store – whole wheat (Or regular) pita bread, flat bread, regular or garlic naan, pre-made pizza base, etc. I used to make this using wheat pita bread during college all the time; it was such a quick, healthy, no- mess dinner that can be whipped up in 15 min – no joke! Try it! For tihs working momma, it’s all about quick meals. Don’t get me wrong…I love cooking, but being a working momma, it’s more about spending time with my kiddos than in the kitchen.

Ok so let’s talk about paneer. Paneer is an Indian fresh, dry curd cheese similar to unsalted pressed ricotta cheese. Many people refer to this an Indian cottage cheese. Wanted to give this pizza a bit of an Indian flavor and let me tell you, you can’t go wrong with it. It tastes freaking delicious! I am not a fan of panner; never have been but “marinated paneer” used for this pizza tasted so good. You can make paneer at home too, but I used store-bought paneer (avaialble at Indian grocery store).

I chose to keep my pizza simple and only added bell peppers and onions as toppings in addition to marinated paneer, but you can certainly add any other veggies you like – broccoli, corn, zucchini, olives, etc. I didn’t add halopeno, but if you like to get a spicy kick, def add it.

Marination of paneer
1/2 cup plain greek yogurt
1/4 tsp salt
1/4 tsp tumeric
1/4 tsp red chilli powder
1/4 tsp coriander powder
1/4 tsp garam masala
2 tsp sugar
1 tsp lime juice
1/4 tsp chaat masala
1/4 tsp minced ginger
1/4 tsp minced garlic
7-8 oz paneer cut in 1/2 inch cubes (my store bought paneer was 12 oz and I used a little more than half of it)

Recipe (NOTE: above recipe was good for 5 medium sized naans)

  1. Marinate Paneer
    • In a mixing bowl, combine all ingredients listed above for marination of paneer. Toss in paneer cubes. If prepping few hours before, cover the bowl and keep refrigerated. I would recommed prepping this at least 30 min -1 hr prior to topping it on the pizza in order for paneer to get marinated and absorb all the flavors.
  2. Build your own pizza
    • Spread regular pasta sauce on the naan (as much or as little you like; I recommend at least 3-4 tbsp). Spread it evenly to coat the pizza, leaving 1/2 inch from edges
    • Add shredded cheese of your preference (again, as much or as little you like). I prefer mozzarella cheese
    • Add 6-7 cubes of marinated panner followed by thinnned sliced onions and bell peppers.
  3. Bake your pizza
    1. Take 1-2 tbsp of oil and cook the naan on a pan on the stovetop for few min to make the base crispier. (P.S. this step can totally be skipped, if desired.)
    2. Toss the pizza in the oven at 350 degree F for about 10-12 min. Wait till all the cheese has melted, vegetables look cooked and edges look crip.
    3. Air fryer: Skip step 1 and toss the pizza in the air fryer at 400 degree F for about 10 min.
