Quinoa Garden Veggie Burger

I have been hunting for quinoa based recipes lately. Being an Indian (Gujarati to be specific), most of my traditional Indian meals are unfortunately high in carbs. Quinoa is one of my latest obsession. The Incans called it the mother of all grains. Quinoa is rich in fiber, minerals, antioxidants and all nine essential amino acids; is gluten-free, has low glycemic index, is high in protein and fiber and has so many additional health benefits. Check this out if you’re interested in reading more about it. I stumbled upon a quiona based burger recipe the other day and modified it a bit to create my own version. This one is made with quinoa, brown rice, potatoes and other veggies. I added some Indian spices, but they can be subbed (in my opinion) if you don’t have it handy and it will taste just as good. By the way, this recipe is approved by my 1.5 yr old so def give it a try!

Ingredients

  • 2 medium sized potatoes, boiled and mashed
  • 1/3 cup cooked brown rice
  • 1/2 cup cooked quinoa
  • 1 green bell pepper, finely chopped
  • 1/4 cup corn (fresh or frozen)
  • 1 small carrot, finely grated
  • Spices
    • 1/2 tsp red chili powder (add more if you don’t have garam masla and chaat masala mentioned below)
    • 1 tsp cumin powder
    • 1/2 tsp garam masala
    • 1/2 tsp chaat masala
    • 1 tsp black pepper
    • 1 tsp sugar
    • Salt to taste
  • 1 to 2 tsp lemon juice
  • 1 tsp sweet and sour chilly sauce
  • 1/2 cup bread crumbs (optional)

Recipe

  • Combine all ingredients (in no specific order)
  • 1/2 cup bread crumbs should allow nice binding; add more if needed
  • Take a small portion of the mixture, make round balls and flatten it gently to make patties
  • Place patties on parchment paper and place in freezer for about 15-20 min
  • Heat a pan on medium heat; coat with oil and pan fry the patties on both sides OR air-fry for 12 minutes (flip sides at 6 minute mark)
