Fettuccine with Roasted Tomatoes and Arugula

Oh ARUGULA, why haven’t we met before? This is a Crazy simple recipe and literally came together in 10 min. And guess who loved it? Yep, you guessed it right! My picky toddler and as y’all know, Happy Kids = Happy Momma. If you have never tried arugula before, you need to give this recipe a shot. And the flavors that roasted tomatoes with garlic add are just magical.

Serving size – 3

Ingredients
Cherry tomatoes – 1 pint
Garlic – 3 cloves
Olive oil – 3 tbsp
Salt – 1 tsp
Black pepper – 1 tsp
Fettuccine – 4 oz
Baby Arugula – 2 -3 cups packed (add as little or as much as you like because why not right?)
Pesto sauce – 3 tbsp (pretty easy to make at home, but used store bought for this recipe)
Chilli flakes – 1 tsp
Parmesan cheese and basil to garnish

Recipe
1. Pre-heat oven to 400 degree F.
2. Place cherry tomatoes on a baking tray or sheet pan. Drizzle olive oil. Add 1/4 tsp salt and 1/4 tsp black pepper. Place in the pan with garlic cloves. Bake for 20 – 30 min
3. Boil Fettucine
4. Add 2 tbsp of oil in a pot (low-medium heat). Add argula and lightly roast for 1-2 min. Add boiled fettucine and roasted tomatoes. Add 3 tbsp of pesto sauce. Add salt and black pepper to taste
5. Add chilli flakes to make it a bit spicy, desired.
6. Garnish with parmesan cheese and basil.
