Blueberry Lemon muffins

Who doesn’t love muffins? I am a sucker for easy meals; all types of meals. Prepped these delicious muffins in 15 min. This recipe calls for a lot of blueberries, but what’s a blueberry muffin if you can’t taste it in every bite?

Ingredients

1 cup all purpose flour and 1 cup whole wheat flour
1 tsp baking soda
1/8 tsp salt
1/2 cup oil
2 large eggs
1 cup full fat yogurt
1 cup sugar
4 tbsp lemon juice
1 tbsp lemon zest
1 1/2 tbsp vanilla extract
2 cups blueberries

Recipe

  1. Pre-heat oven to 425 degree F and line a muffin pan with 12 liners
  2. In a large mixing bowl, beat together egg and sugar. Add oil, yougurt, salt, vanilla and mix these well until incorporated. Beat in lemon juice and lemon zest.
  3. Add in all purpose flour, wheat flour and baking soda.
  4. Coat blueberries with all purpose flour and fold them in. Keep few on the side and add for dotting on top before baking.
  5. Bake at 425 degree F for 5 min, then lower the temp to 350 degree F for 10 min.
  6. Insert a toothpick to ensure that it comes out clean (sign that muffins are baked).
  7. Allow them to cool on the wire rack for 5 min after taking them out.
