Cheesy Cauliflower (aka Cauliflower Mac and Cheese for Kids)

My 1 year old pretty much ate most of this! At first I was skeptical about this kid friendly version of Mac and Cheese, but it was hit in the family! Hubby loved it as much as my 1 year old did so that’s a win-win right?

Ingredients
Cauliflower – 1 head
3 tablespoons butter
1/2 tsp garlic powder
1/2 cup cheese (cheddar or Mexican fiesta shredded)
1/2 cup milk (or 1/4 cup heavy cream + 1/4 cup milk – any kind)
Salt and Pepper to taste

📌 Preheat the oven to 400 degrees F.

📌 Melt 2 tablespoons of butter. In a large bowl, toss together the cauliflower florets with the melted butter. Season with sea salt, black pepper and garlic powder. Arrange on a baking sheet (aluminum foil or parchment paper). Roast for about 15-20 min, until crisp-tender/top of the florets have changed to golden color).
📌 Mix cheese of your choice, milk +/-heavy cream, and remaining tablespoon of butter in a bowl and microwave for 50-60 second or until cheese mixture is smooth. Stir frequently in between. (Heavy cream will make cheese sauce creamier; I didn’t have it and just used milk and it still turned out great)
📌 Toss cauliflower with cheese sauce right before serving.
